As the result of being within the Sichuan basin, the climate there is humid and cold. There, Sichuan people like to eat hot and spicy food to keep warm. According to my experience, Sichuan hot pot is the best hot pot in China which I highly recommend. There are many authentic Sichuan restaurants in New York, especially in Flushing. The dish I’d like to introduce is Chongqing Spicy Deep-fried Chicken. The history of this dish is quite short. It has been popularized since 1990. It was a man who spent three years improving this dish to make it what it is now. It is famous for its smell and taste. The tip of cooking this dish is that dry chili should be more than the chicken thigh because that will give it a strongly good smell, which is essential for this dish.
