Hi, welcome. Thanks for coming to my blog. This time, I am not going to talk about China’s eight cuisines. Surprisingly, I’d like to introduce Beijing Cuisine to you. Beijing, also called Peking, is the capital city of China as well as one of the most famous historical and cultural cities in the world.
It has a history of over 3000 years and a capital history of more than 850 years. Because of the unique status, Beijing is the place that gathers people from all over the country. As a result, Beijing Cuisine is influenced by culinary traditions from all over China, and also, is influenced by the Chinese imperial cuisine as well.
Beijing is known for its countless street foods and a great variety of dishes. The flavor of most of Beijing dishes is not strong and acceptable by most of the people. There are some dishes that you must eat when you go to Beijing, such as Peking Duck, Instant-boiled Mutton (shuàn yángròu), Wheaten cake boiled in meat broth (lǔzhǔ huǒshāo), Zhajiangmian (zhájiàngmiàn), etc., and ALL KINDS OF STREET FOODS AND SNACKS!
I understand that many of you do not have time go all the way to Beijing to taste those delicious foods. So, here is the recommended restaurant. There is a newly open Chinese restaurant, Dadong, nearby Bryant Park offering authentic Peking Duck. Be sure to try it out!
This time, I will teach you how to cook Zhajiang Noodle (Zhajiangmian). It consists of thick wheat noodles with zhajiang sauce. It is a traditional food in Beijing. Okay, let’s jump right into today’s tutorial.
First, go over the ingredients and seasonings,
Pork Belly
Cucumber
Chinese Soybean Paste
Sweet Soybean Paste
Noodles (recommend thick wheat noodles)
Dark Soy Sauce
Chinese Cooking Wine
Green Onion
Ginger
Sugar
Chicken Flavor Soup Base Mix
Salt
1.Cut pork belly into small pieces
2.Mix Soybean Chinese soybean sauce and sweet soybean sauce at the ratio of 4:1 with clean water
3.Heat the frying pan and pour some oil (Add some sesame oil can make it smell better)
4.Fry the pork belly pieces until them turn white
5.Add ginger and stir
6.Add the soybean sauce, some dark soy sauce, cooking wine, and green onion, stir constantly
Add some salt and chicken flavor soup base mix
Keep stirring for a few minutes and the sauce for your Zhajiangmian is done, put some slides of cucumber with it
